Was there ever poison headcrab variations?

What do you mean by poison headcrab variations? In the HL2 Beta, initially there was only a fast headcrab, after developers returned the classic one, and then they added a poison variation, there were no more headcrab variations.
Don't like HL2 beta actually. But the visualization is pretty cool tho.

yeah but there are two separate npcs for the poison headcrab that are the same thing, npc_headcrab_black and npc_headcrab_poison

yeah but there are two separate npcs for the poison headcrab that are the same thing, npc_headcrab_black and npc_headcrab_poison
i doubt it, but the fact that those two entities co-existed is interesting
just pretend this is a signature

The combine were to augment them to make them more deadly for chemical-weaponesque use, so having only one modified strain, as close to a headcrab as a stalker is to a human. In early versions of the game, the black headcrab was just in thee to mix things up with the colours, it was exactly the same as the standard one (the normal skin for the fast headcrab. This can be seen in the files as the fast headcrab is simply labeled headcrab.mdl, whereas the normal headcrab is labelled headcrab_classic.mdl. Then the developers decided to reuse the currently unused variation (much how the gunship variation was unused in the final game) and turn it into a ranged enemy, which can also be seen in the broken spitattack animation. The whole bringing you down to one health thing was an accident, like the chopper dropping multiple bombs in retail, turned feature as 'they found it interesting to see player instanly target them down on hearing their audio cues' They then turned it into a full enemy. Headcrab_black.mdl is just a leftover bit from the first rendition, most likely a valve employee linked them, so they are just the same thing. I do like interesting questions like this, gives you an insight into how the game was made hope this answered your question :D

In early versions of the game, the black headcrab was just in thee to mix things up with the colours - the poison headcrabs are a return to an idea that was conceived for HL1. RTB states it plainly. There being "black" headcrabs in entity and model names is simply to make it easier to place them; multiple linking of classnames to the same class in the code is nothing unusual and is done for convenience.

Sorry yeh, the poison headcrab can be seen in raising the bar. My bad there, but  everything else can easily be proven. The spitattack animation purely for the headcrab black in my opinion is definitive proof for it originally not being used as this, parts of the files, can prove that the model was made before headcrab_classic, and at this point there was no plans as far as I believe (feel free to offer information to contradict me) for heaxcrab variations. This means I do think the model headcrab_black began as merely an unused variation, before becoming a ranged 'spitter' headcrab, then the poison one. This almost certainly means that the headcrab_black model is just a leftover from this development cycle, this is all simply my theroy from looking at things

Yes, headcrabs were (and still are) bio-weapons used by the combine. This is easy to find out.

Which is why I wrote that already. "Headcrabs are bio-weapon" wasn't a question, it was a statement with a question mark indicating they are not chemical weapons.
